Orange Tahini Blondies

Do you ever have those days when you just need to bake?

Well today was one of those days for me.
I’ve been stuck home for a week with the ‘obligatory’ (it would seem, as I have it at the end of every term) end of term flu – viral laryngitis to be specific, and cabin fever has definitely set in.
Luckily for me, today was the first day that I have felt well enough to do more than make dinner and lounge on the couch watching terrible day time television. So, following a sleep in and a quick nap on the couch, I made my way into the kitchen.

My husband, the wonderful man that he is, had gone shopping during the week and returned with what I can only describe as the ‘greatest discovery’ in my tahini loving world. Orange Infused Tahini.
That smooth tahini texture, with a hint of sweetness and the delicious zing and almost floral note of citrus that comes with the infusion of orange. My mind went immediately to ‘how can I bake with this?’.

So an afternoon of experimentation has ended with a hot drink, a generous slice of white chocolate jaffa-esque tastiness and the ‘fireplace‘ show on Netflix. (If you’re wondering what this is, it’s literally an hour of a fire in a fire place that has been recorded – deliciously relaxing and the perfect way to zone out and enjoy the last few hours of a restful Sabbath).

ORANGE TAHINI BLONDIES
Ingredients:

1 cup almond meal
3/4 cup orange tahini spread
2/3 cup caster sugar
1/2 tsp baking powder
1 tsp vanilla
1/3 cup white chocolate melts/buttons
2 tsp orange zest
2 eggs

Method:
1. Preheat your oven to 180 degrees celsius and line a brownie tray with baking paper.
2. As quickly as you can (because who can take their time when they have those strong brownie/blondie cravings?!), throw all the ingredients into a bowl and mix until you have a smooth batter studded with chunks of white chocolate.
3. Scrape the batter into the lined brownie tray and smooth until evenly distributed in the baking tray.
4. Place in the oven and cook for 35 – 40 minutes (dependent on your oven – mine cooked for 35 minutes exactly).

Enjoy a slice of this chocolate studded beauty with a warm drink and a great book for an afternoon of pure bliss.
