Gingerbread Chia Pudding

Looking for a tasty and cute Christmas treat? Well look no further!

These gingerbread spiced chia puddings, topped liberally with fresh cherry compote and the cutest little gingerbread scooper will no doubt steal the show!

GINGERBREAD CHIA PUDDING

Ingredients:
Chia Pudding
3 cups almond milk
1.5 tsp vanilla bean paste
1/2 tsp cinnamon
1/8 tsp nutmeg
1/2 tsp ginger powder
1/3 cup golden caster sugar
2/3 cup + 2 tbsp white chia seeds

Cherry Compote
2.5 cups pitted cherries
2 tbsp sugar
2 tbsp water
1 tsp vanilla extract

Method:
Chia Pudding
1. Heat the almond milk, sugar, vanilla, cinnamon, nutmeg and ginger powder until the sugar has dissolved.
2. Take off the heat and stir through the chia seeds. Let the mixture sit for 15 minutes, then mix again. Pour the mixture into glasses and place in the fridge to set for 5 hours or overnight.

Cherry Compote
1. Place cherries and water in a saucepan and cook on a low heat until softened and starting to collapse.
2. Add the vanilla and sugar and cook for a further minute or two, or until the sugar has dissolved.
3. Remove from the heat and set aside to cool.

Assembly:
1. Once the chia puddings are set and the cherry compote has cooled, top each chia pudding with dollops of cherry compote, followed by a cute and crunchy stem ginger gingerbread man
