Stem Ginger Gingerbread Men


1.5 cups gluten free plain flour
1 egg
1 tsp vanilla extract
3 tsp ginger powder
2 tsp cinnamon
Pinch nutmeg
3/4 cup brown sugar
100g butter
1 cup stem ginger (naked ginger uncrystallised)

1. Preheat your oven to 180ºC.
2. Cream your butter and sugar together until light and creamy.
3. Add the flour, vanilla, ginger powder, cinnamon, nutmeg and egg to your creamed butter and sugar. Mix together until well combined.
4. Very finely dice the stem ginger and mix through the ginger dough, ensuring the stem ginger is evenly distributed.
5. Roll out portions of dough between two pieces of parchment paper until quite thin, then refrigerate for 10 minutes.
6. After 10 minutes, use cookie cutters to cut out your desired shapes (I used a small gingerbread man cutter) and carefully place on a lined baking tray.
7. Bake at 180ºC for 8-10 minutes
