Green Mango & Daikon Slaw


400g daikon radish, finely shredded
1 green mango, peeled and finely shredded
2 spring onions, thinly sliced
2 small carrots, peeled and finely shredded
1 tbsp finely shredded mint leaves

Vegan Nuoc Mam Ingredients:
Juice of 1/2 lime
1.5 tbsp vegan fish sauce (I like Fysh Sauce by Cocomino)
1/2 tbsp chilli sauce (I like to use Linghams Chilli Sauce)
1/2 tbsp coconut sugar

1. In a large bowl combine shredded daikon, mango, carrots, spring onion and carrots. Toss together until well combined.
2. In a small bowl, combine lime juice, fysh sauce, chilli sauce and coconut sugar. Mix together and spoon around 3 tablespoonfuls of the sauce over the salad.
3. Toss the salad once more, ensure everything is lightly coated in the dressing.
4. Pile high on a serving plate with some extra lime wedges as a garnish, for those that like a little extra zing to their salad!
